Orata ai ferri. I don’t know which is more eco friendly – farmed or wild. I used farmed for this. Serves 4

4 tablespoons olive oil
juice of a lemon
1 sprig parsley — chopped
4 small sea bream — cleaned and scaled
fine breadcrumbs
salt and pepper
- Mix together the olive oil, lemon juice, parlsey, salt and pepper in a dish. Add the fish and make sure it is well coated in the marinade. Leave to marinate for 3 hours.
- Drain the fish and reserve the marinade. Sprinkle with the breadcrumbs, pressing them on with your fingers.
- Cook under a preheated grill,turning two or three times and basting with the marinade, until the the flesh flakes easily. About 15 minutes.
