From Puglia. This is another very simple recipe that I cook a lot when green beans are in season. The pictures have been sitting on my computer for a while, so they are no longer in season, but should be fairly easy to get. The recipe uses ricotta marzottica or dura, which is hard to get outside Italy. The best substitute is grana or parmesan. Don’t use regular ricotta, it’s a different thing completely. The beans are cooked for quite a long time and you might consider them to be overcooked, but it works well with the pasta. If you prefer, you could add the beans along with the spaghetti.Serves 4.

  1. Top and tail the beans
  2. Boil the beans in plenty of boiling water for 10 minutes.
  3. Add the spaghetti to the water and continue cooking until the pasta is al dente.
  4. Drain the beans and pasta and mix with the warmed tomato sauce.
  5. Serve topped with ricotta marzotica or grana.

Orecchiette with tomatoes and ricotta

  This is the first dish I had cooked for me in Pulgia. Orecchiette is the most traditional pasta of the region. The most popular way to serve them is with turnip tops (cime di rape) , but this way is also common. Feel free to leave out the chilli. This dish uses ricotta dura which is a type of aged ricotta from Puglia. It has a fairly mild, but distinct flavour.  Don’t try this using regular soft ricotta, it won’t be the same. It would probably be ok with a mild pecorino if you can’t find ricotta duraServes 4

  •   400  grams  orecchiette — fresh if possible
  •   300  grams  cherry tomato — halved
  •   1       handful  basil leaves — torn
  •   3       tablespoons  ricotta dura – grated
  •   1       clove  garlic — peeled
  •   3       tablespoons  olive oil
  •            pinch  chilli flakes
  1. Fry the garlic clove in the olive oil until golden and then discard.
  2. Add the tomatoes and chilli and continue cooking for about 15 minutes
  3. Just before the end of cooking, add the basil
  4. Mix with the cooked orecchiette, top with the cheese and serve

Farfalle Gialle e Verdi. I had this for dinner tonight. Rather nice, even if I do say so myself. :-) Serves 4

  1. Fry Courgettes in a little olive oil over high heat until transparent. Set aside
  2. Cook the pasta in boiling water until al dente.
  3. Melt the butter in a baine marie. Add the saffron and let it infuse.
  4. Mix the pasta with the saffron butter
  5. Add the fried courgettes and mix well.
  6. Sprinkle the grated cheese on top and serve
