Mortadella is a large sausage or salume made of finely minced, heat-cured pork, which incorporates at least 15% small cubes of pork fat (principally the hard fat from the neck of the pig). It is flavoured with spices, principally  whole black pepper.  Mortadella is a staple product of Bologna and the north American product Bologna is quite closely related.
